Pulling back the curtains to unveil Le Saint-Germain, Executive Chef Benjamin Brial quietly removed something else as well; the traditional plat du jour. For the new, light-filled restaurant, he chose to offer Paris something singular: A true plat du moment – a bespoke fine dining experience, different for every guest.
What follows is a meal to savour. There is a menu that breaks free of starter-main-dessert, to follow appetite and instinct; A chef who is an expert hand at the classics, with the artistry to reimagine them; A refined gourmet restaurant that delights the senses from breakfast oeufs fermiers to after-dinner gourmandises.
Located in the heart of the hotel, the setting is as imaginative as the menu. Diners are watched over by a colourful pantheon of heroes, afloat in Fabrice Hyber's radiant glass ceiling. Beneath them, small clusters of sculpture and handmade furniture, and a towering library, turn Le Saint Germain into a salon, as varied and inviting as a friend's living room. Most inspiring of all is the creativity pouring out of Brial's kitchen, making this a space, meal and moment to remember.
